Pounded yam is a smooth, stretchy staple food made by pounding boiled yam until it becomes soft and elastic. It is widely eaten in Nigeria and is especially common in Igbo households, where it is served with soups such as Ofe Oha, Ofe Nsala, and Ofe Egusi.

  1. Peel the yam tubers and cut into medium-sized chunks.
  2. Wash thoroughly to remove dirt and starch.
  3. Place yam pieces in a pot and add enough water to cover them.
  4. Cook until the yam becomes soft and easily pierced with a fork.
  5. Drain excess water (leave a small amount to help with pounding).
  6. Transfer yam into a mortar or pounding device.
  7. Pound continuously until smooth, stretchy, and lump-free.
  8. Add small amounts of water if needed to achieve a soft, elastic texture.
