__NOtOC__ Sabaayad (also called Kimis) is a traditional Somali flatbread. It is a layered bread commonly eaten for breakfast or served with tea, honey, soups, curries, and meat stews throughout Somalia and the Horn of Africa. It is made from a simple dough of flour, water, salt, and oil, then cooked on a hot griddle until golden brown and flaky.

  1. Combine the flour and salt in a large bowl.
  2. Add the oil and mix thoroughly.
  3. Gradually add the warm water and knead until a soft, smooth dough forms.
  4. Continue kneading for 5–10 minutes.
  5. Cover the dough and allow it to rest for 30 minutes.
  6. Divide the dough into 8 equal portions and shape into balls.
  7. Roll each ball into a thin circle.
  8. Brush the surface lightly with oil.
  9. Fold the dough into a square and roll it out again.
  10. Heat a lightly oiled griddle or frying pan over medium heat.
  11. Cook each sabaayad until golden brown on both sides, turning once.
